Ingredients
8 slices of thick cut bacon
1 large onion chopped
1 tsp salt
½ tsp pepper
1 tbsp brown sugar
2 cloves of garlic chopped
8 oz. cream cheese softened
1 cup sour cream
2 cup mozzarella shredded
10 oz. can diced tomatoes with chilies drained
Instructions
cook bacon in a large skillet over medium heat until slightly crispy
remove and allow to drain on a paper towel
chop when cooled to the touch
drain the bacon grease and leave 1 tbsp in the skillet
add the onion to the pan and season with salt, pepper, and brown sugar, cook for 1 to 2 minutes
stir in the garlic and cook for another 30 seconds to 1 min
mix the cream cheese and sour cream together in the insert of the slow cooker
add in the mozzarella cheese, onions, bacon and diced tomatoes
heat on high 1-2 hours or until warm and cheese has melted.
serve with chips or crackers (or dig in with a spoon)
