Ingredients
2½ cups finely crushed vanilla wafer cookies
2 cups powdered sugar
2 Tbsp cocoa powder (finest quality you can buy)
1 cup finely ground nuts (almonds or walnuts, per your preference)
3 Tbsp light corn syrup
¼ cup flavorful rum (alternate non-alcohol choices: see final line of recipe)
Directions
1. In a large bowl, thoroughly mix crushed cookies, 1 cup powdered sugar, cocoa powder, and finely ground nuts. (Set aside the 1 cup of remaining powdered sugar in another bowl.)
2. Add syrup and rum liquor (indulging in a splash or two more if you desire an intense flavor); then thoroughly combine.
3. Scoop approximately 1 Tbsp of mixture into the palm of your hand. Using both your palms, roll each scoop into a perfect ball, while using a pressing motion. Consider using plastic gloves, which makes rolling the balls easier. Then place each ball into the powdered sugar bowl, roll again lightly around, and place on a large platter or kitchen sheet. When finished, put platter or sheet of chocolate balls into the refrigerator to help them set, covered with plastic wrap, approximately 1 hour.
