Strawberry Bark

Ingredients:

Strawberries

Peanut Butter (smooth or crunchy)

10oz bag semi-sweet chocolate chips

1tbspn olive oil


Directions:

  1. Line a small cutting board or baking sheet with wax paper.

  2. Remove the tops of the strawberries with your hands. (Do not husk them! This will ruin the effect.) Slice the strawberries lengthwise, giving you thick slices for the bottom of the bark.

  3. Place a row of strawberry slices down on the wax paper. When you go to place down your next row, have the slices face the opposite direction so the ends can fit nicely within the grooves of the first row. Repeat this step three or four times, depending on how many strawberry slices you have, until you have an even square or rectangle of slices on your paper.

  4. Using a loose natural peanut butter (creamy or crunchy will work), spread a thick layer of peanut butter onto the strawberries. Let some of the strawberries stick out on the ends for the presentation!

  5. In a small saucepan, melt a 10-ounce bag of semi-sweet chocolate chips with 1 tablespoon of olive oil over medium-low heat. Stir constantly to make sure none of the chocolate sticks at the bottom and starts to cook; you want it to stay smooth! As soon as the chocolate is fully melted, remove it from the heat. This should take 2-3 minutes.

  6. Spread the melted chocolate on top of the peanut butter layer of the bark. Once the chocolate is spread evenly, sprinkle the top with coarse sea salt.

  7. Pop the cutting board with the bark into the freezer for 2 hours or more. Once frozen, slice your bark in whatever size or shape pieces you want.
